Ingredients:
2 large chicken breasts, cut into strips
Olive oil for frying
1 punnet asparagus, washed


Marinade:
200 ml double cream yoghurt
30 ml honey
2 tbsp hot mustard
Juice and zest of 1 lemon
1 tbsp crushed garlic


Tzatziki:
150 ml double cream yoghurt
1 tbsp crushed garlic
1 tbsp honey
Zest of 1 lemon
1⁄2 small cucumber, grated and water squeezed out.

Salt and pepper

Method:
Make marinade for the chicken: Mix the yoghurt, honey, mustard, lemon and garlic.
Add chicken strips and mix thoroughly, marinate for 10 min.
Skewer chicken onto bamboo sticks.
Heat pan.
Place chicken into a pan and fry for 3 – 4 minutes on each side until evenly cooked.
Once cooked, remove from pan.
Make tzatziki by mixing all the ingredients together, season with salt and pepper.
Fry asparagus over medium heat in 2 tbsp olive oil until just cooked.
Squeeze the juice of half a lemon over asparagus, season with salt & pepper and remove from pan.

Place asparagus on a plate, top with chicken skewers and serve with tzatziki.
